What ...

... was your week like last week? -

My week:

- Wednesday, pick up Steve at the airport at 5 am. We waited, and waited in the airport-cell-phone area; and no call from Steve. During his flight from Anchorage, he played games on his phone and used up all the power. We went looking after he was an hour late. We found him.

-Thursday: Out-of-town family arrives. Bachelor party at the bowling alley, and bachelor dinner at Five Guys.

- Friday: Temple session for Stephanie and Erica's endowments. Wedding reception in Salem. The reception was fabulous. Only one hitch, my rental shoes hurt my feet. :)

- Saturday: Wedding lunch and wedding sealing in Portland.

- Sunday: Church and some site seeing with family.

- Monday: Saying goodbye to family and teaching night school.

- Tuesday: Saying goodbye to Steve and teaching night school.

Needless to say, today is relaxing day. Was it worth it? Yes! The end result is a happy son and our new daughter. I love her and her family.

Swedish Apple Cake ...

... from our friend, Maria in Sweden. She posted the recipe (click here).

What to do, what to do. The recipe called for two or three apples. How do you measure apples with dried fruit? I used four one-hand fulls. Think of it as fist pinch of apples. :)

I then put the dried apples in water, and brought the mixture to a boil. I let the apples stay in the hot water for about 15 minutes. I followed this by draining off the excess water.


Next step was to mix the butter and sugar, then follow by adding baking powder, flour, and milk. I had the wrong fitting on the mixture (shown above). I changed to the wire whip to beat the mixture and get some air into it.


I doubled the cinnamon-sugar. the recipe called for me to put on top any cinnamon-sugar left over after coating the apples. I wanted to make sure I had some left over.


Apple cake is done, and I added a glaze. The recipe did not call for a glaze, but you know me. I was surprised that the cinnamon-sugar on top did not melt. I will have to think this over. When you make cinnamon rolls, the cinnamon-sugar does melt. Interesting...


Nancy and I had a piece, and it was very good. My apples were mostly on top. The recipe talked about apple wedges and being poked into the batter. Next time I will put 1/3 of the batter in the pan, add the apples, followed by the rest of the batter.
